Garlic potatoes and greens

This spring, Jason and I joined this program near our house called fresh box! Basically you pay a weekly fee, and receive a box of fresh veggies and fruits. This has been a lot of fun! I drive to the store each week and they bring the box out to my car! Between this and Shoprite from home were really getting spoiled.

The whole point of the drag box program is to eat local and what’s picked desk weekly. Every week is a surprise and we have already eaten something new at least once each week. What’s nice about this program is they also provide suggested recipes for each item.

This week there were a few unfamiliar items that we were nervous to try…. Collard greens and bak choy. I decided to give their suggested garlic potatoes and greens a whirl and was so happily surprised.

What you need:
2-3 whole potatoes chopped or 5/6 red potatoes
1/2 onion
2 spoonfuls minced garlic
2-3 bunch of collard greens
2-3 cups of bak choy greens
Olive oil
Salt
Pepper
Red pepper flakes

To start:
Pour some olive oil in a large skillet over medium high heat. Add chopped onion and garlic and sauté until translucent 5-8 minutes.

Next add the chopped potatoes and bak choy. Make sure they are coated in olive oil (add some more if you need to)

Cover and cook for 10 minutes

While these were cooking I chopped the collard greens.

Then I added the chopped greens to the potato mixture, covered, and cooked for 15 minutes.

Right before serving, add salt, pepper, and red pepper flakes to taste.

This was delicious my husband and I both loved it!! The next day we added some leftover steak for lunch and it was even better!!
